Vegan Chocolate Cake

Vegan Ice cream cake recipe?
Hi everyone. I am an omni and not too familiar with vegan recipes. Im looking for a tried and true recipe for vegan WHIPPED CREAM (if there is such a thing)
I am a cake decorator and was just asked to make a 100% vegan Ice cream cake. I already have a great chocolate cake recipe that I just used for another cake I made, and I know how to make/where to buy vegan ice cream, but dont know how you would go about making the whipped icing for the cake. You cant really use any other type. Buttercreams are no good in the freezer.
I said 'ok' guessing that you can almost find any food in vegan form.
I suppose I could cover it in a chocolate ganache if all else fails... but id really like to make a nice whipped topping because its classic to ice cream cake.

1.2 deciliter soy milk (1/2 cup)
1 teaspoon barley (or corn or potato) starch
75 g vegan margarine, in room temperature
1 deciliter granulated sugar
1 teaspoon vanilla extract
1 teaspoon vanilla sugar
Pour all but 2 tbs. of the milk into a small saucepan. Stir the cornstarch into the remaining milk until all the lumps disappear, then pour mixture into the rest of the milk. Bring to a boil, then simmer over medium heat until thickened. Remove from heat and cool to lukewarm.
Cream butter and sugar together with a stand or hand mixer for 3-5 minutes, then add extracts. Continue to beat while adding cooled milk mixture, a little at a time, until fully incorporated, stopping to scrape down sides as necessary. Beat for 2-3 more minutes until light and fluffy. Powdered sugar may be added at this time to increase sweetness (or to thicken), if desired.
