Ideas for truffles and rum balls?

So I'm making truffles for some people and I was looking for ideas as to flavours, centers, coverings and stuff (nuts, rum and all those types)

Also how would I go about doing like a chocolate cup with rum ganache inside? What should I use, cause I don't wanna make chocolate and rum for the filling if the cup is gonna be chocolate.

And what chocolate should I use for most of them milk, dark and will white work as well? Would dark be too sweet?

Should I add like a cake to the rum balls as well, cause most rum balls you find are very cakey where as I was just going to do the truffle (boiled cream and chocolate), how would that go?

Sorry for all the questions lol, any ideas and tips would be helpful, ty =]

Rum Balls

This recipe for rum balls can also be used to make bourbon balls—simply substitute bourbon for rum. These candies are better after they have aged for several days, so be sure to make them several days before you plan to serve them.

To crush the wafers, you can either use a blender or food processor, or place them in a large Ziploc bag and crush them with a rolling pin. Be sure that the cookies are in small crumbs, not large chunks. This recipe yields approximately 30 candies.

* 1 cup chocolate chips or chopped chocolate
* 3 tbsp light corn syrup
* 1/2 cup rum
* 2.5 cups crushed wafers (about one 10-ounce box)
* 1 cup powdered sugar, divided
* 1 cup finely chopped nuts

Place the chocolate in a large microwave-safe bowl and microwave until melted, stirring after every 45 seconds to prevent overheating.

Once the chocolate is melted, add the corn syrup and rum and stir until well-combined. Stir in the wafer crumbs, 1/2 cup powdered sugar, and chopped nuts. Place the mixture in the refrigerator until it is firm enough to shape, about 1 hour.

Using a teaspoon, roll the candy into small balls between your palms. Place the remaining 1/2 cup powdered sugar in a small bowl, and roll the balls in the sugar. (Alternately, the balls can be rolled in chopped nuts or cocoa powder).

Place the rum balls in an airtight container and refrigerate them to age them for several days. Rum balls can be stored for an additional 2-3 weeks, and many people feel they are better the longer they are aged, so they are a great make-ahead treat. Store the balls in the refrigerator, and let them come to room temperature before serving.

Terrific Truffles

I spend the week before Christmas baking a selection fo cakes, cookies and other goodies for friends and family. These candies coudn't be easier.

* 1 package (8 ounces) cream cheese, softened
* 3 cups confectioners' sugar
* 12 squares (1 ounce each) semisweet chocolate
* 1-1/2 teaspoons vanilla extract
* 3/4 cup crushed peppermint candy, flaked coconut or ground nuts

In a large bowl, beat cream cheese. Gradually add confectioners' sugar; mix well. In a microwave-safe bowl, melt chocolate; stir until smooth. Add chocolate and vanilla to cream cheese mixture; beat until blended. Refrigerate for 1 hour.

Shape into 1-in. balls. Roll in crushed peppermint, coconut or nuts. Store in an airtight container in the refrigerator. Yield: about 5 dozen.
