Melting chocolate - do I have to...?

I just got an electric chocolate-melting pot (like a small crockpot), but it didn't come with any instructions. I want to make chocolate-covered oreos with my son. My question is: Do I have to stir the chocolate while it's hot, like to keep it from burning, or is it okay if I don't? Is there anything else I should be aware of, or can I just plop a bunch of chocolate chips in, plug it in, and be on my way? Thank you!
